Bamboozle doesn't interrupt anything. You play it right "AFTER" a card has been purchased, returning the card and causing a new purchase. In fact I would argue that a Cyber Bunny with the "Most Toys Wins" evolution would get 2 points if both purchases were keep cards because Bamboozle states that you return the card and the energy but makes no statement about undoing the effects of the original purchase.

You'll also notice that Bamboozle makes no statement about "on a players turn" so there is no reason to assume that the playing of Bamboozle causes it to still be a players turn. Therefore, I would not allow it to be played after the victory was achieved.
