So a "discussion" came up during a game yesterday.

One player (not me), had 12 points. He ended his roll with 3 points (via three 3's) and then declared he was buying the card that gives 5 points (and takes 4 damage). He survived the damage and declared himself the winner with 20 points. At this point, another player (not me) pulled out the Gigazaur evolution that takes 2 victory points away from everyone.

The first guy felt he won the game as the game is over as soon as he buys the card to push him to the 20 point limit. The rest of us argued that people are allowed to "interrupt" actions using evolutions as they can be "played at any time". This is kind of how we've always played, but it would be interesting to see if we're right or if that's how others play as well.
