There is nothing on the card that limits when or how often you can do this, and you already possess the card, so presumably you could resolve your dice, collect your energy first, then activate Stretchy to change one of your results. This is obviously a bit of a corner case and is unaddressed by the rules, so take my interpretation with a grain of salt, but it seems within the spirit of things. Honestly, this would be my inclination.
However, if one were to seek to be more stringent, one might infer that the listed order along the side of page 1 is the order of dice result resolution, i.e. Victory Points, then Energy, then Attack, then Heal; under this scenario, you couldn't collect an Energy and then use Stretchy to change a VP result to an Attack, but you could change a Heal result to an Attack. Again, I'd be inclined to go with the easier, more relaxed interpretation.
