No need to race.
If Sue is aware of the cards she have, she should know that if Tom roll hearts, she risks to loose energies to him. She can either prevent this by spending them as soon as she sees that Tom is going for hearts or she can take a chance and see what happens but I don't think it's fair to let her react to Tom's move in order to nullify it.
But as I have said before, KoT is a fun light game and should not be taken to seriously when it comes to resolution. We are rolling dice for Peet's sake. So I suggest you agree with your group of the one way you like this type of situation to be resolved and you go for it. At the end of the day, it won't make a huge difference as long as everybody around the board is agreeing with the way to resolve.
