Their are two definitions for the word 'healing' used in this discussion.

For the context of the game healing means to move heart counters up one per heart. But it also means to make oneself better.

When you use a use a heart counter, you can remove one bad thing (by either removing a shrink token, a poison token, or a point of damage). The sentence in the rules is phrased that way to let you know you can only remove one thing with each heart. If it wasn't phrased that way, people would remove a shrink or poison token, and a point of damage with one die.
