Can't Stop remains the unquestioned king, but I also really like the following:

Roll Through the Ages: The Bronze Age
Pickomino
To Court the King
Saint Malo
Shanghaien
Airships
Ra: The Dice Game
Würfel Bohnanza
Catan Dice Game

Almost all of these games are very boisterous, with lots of smack talk, but they also have strategy and reward sound decisions. I expect I find more of that in many of these designs than most do (for example, many people probably consider Pickomino to be an ultra-light crap shoot, but I think it includes some very interesting probability management decisions). King of Tokyo doesn't come close to stacking up to these games--at least, not to me.

I also like a lot of games that feature dice, without them being dice games, such as Castles of Burgundy and Kingsburg. But I view those as a completely different category.
